For the onions: 6 South Carolina sweet spring onions 3 Tbs. Clean and trim the spring onions, leaving one-inch of green on the onion stalk. Split the onions in half lengthwise. Toss with olive oil.

Charleston, SC seems to fancy itself a foodie destination now, so my experiences in town are a long way from the days of my fraternity formal trips back in college. Yes, you can get good seafood and southern comfort dishes, but I was surprised to find this gem of a pizza place, with a limited but well thought out craft beer selection in a planned community in North Charleston. Check out the menu online, but I had to hit the road to drive upstate, so my to go pizza was perfect road food. Very relaxed vibe and they have a bakery attached, so obviously the crust was that nice combo of crispy and chewy.

After reading such great reviews on this place I was very surprised by the results. I got the same with spinach. The pepperoni tasted.. There was VERY little cheese on the pizza. I would recommend asking for extra.
The pair spent the better part of a year forming the concept for a wood-fired pizza shop that would focus on local ingredients. In they flew the coop to start EVO. The first incarnation was a mobile wood-fired pizza oven — in other words, a fancy trailer — that they used for catering. Turns out, people really like fancy trailer pizza.
